You can try whether running restic recover is able to salvage some data. It builds a new snapshot based on all folders for which it can find metadata in the backup repository.

Assuming a somewhat recent restic version, the resulting snapshot can contain a mix of folders from all interrupted backup runs after the last prune execution. The only way to know what that snapshot contains is by running recover.
