Because your restic does not have the --dry-run option to the backup command, obviously.
There’s no restic release yet with that option in the backup command, but you can use the latest master build which does have it by going to beta.restic.net and downloading the appropriate binary for your platform. The next release after 0.12.1 will have the option in it, but for now you have to run the master build.
